Designation of origin for the bolillo from Aguascalientes?

The State Government’s Secretariat of Economic Development, Science, and Technology (SEDECYT) and the Industrial Bakers Group (GIPAN) report that they are seeking protection for the Aguascalientes bolillo as a geographical indication, an intellectual property right based on specific characteristics linked to its production area.

César Arturo Salado Gómez, president of GIPAN, indicated that it is one of the state’s most distinctive breads, distinguished by its unique production technique and its accessibility and delicious flavor, making it a staple of the daily diet of families in Aguascalientes.

“The Aguascalientes bolillo is unique, very special, and we are already seeking protection for a geographical indication so that other states don’t claim they invented it, but rather to recognize that it has been developed here for a long time, that it was born here, and that it has a special characteristic compared to other Mexican breads,” he mentioned.

The state leader of the union highlighted the role of this sector in the local and national economy, a fact that will be celebrated at the national bakery fair, UNIPANIA, an event to be held at Fico 3C from October 2 to 4. Visitors will be able to taste the most famous breads from each state, including those from Aguascalientes.

“We have several; the ladrillito and chamuco are also representative of Aguascalientes,” he added.

The event also promises master classes, demonstrations, tastings, workshops, and activities for bakery, pastry, and gastronomy workers, as well as the general public, all of whom will have free admission throughout the weekend.
