Raw milk “almost disappeared”, but is still sold on the outskirts of Aguascalientes

In Aguascalientes, the sale of raw (unpasteurized) milk is becoming less common, at least in the capital; however, it still persists sporadically in outlying areas and on small farms, where sanitary control is more limited.

The president of the Industrial Dairy Farmers Group (Gilsa), Carlos Alberto Gutiérrez de Luna, stated that the consumption of this product has decreased mainly due to health concerns and a food education strategy promoted by the sector in conjunction with the state government.

“It’s very rare to see the famous ‘doormen’ anymore; it’s because of the issue of food safety and security. People are opting to consume something that is both nutritious and safe,” he noted.

Even so, he acknowledged that raw milk has not disappeared completely, as it continues to be sold in small quantities outside of formal retail outlets.

“It is still being sold, but very sporadically, mainly in backyard barns with low production in the outskirts of the municipality,” he explained.

Meanwhile, the formal sector is promoting the distribution of “Alileche,” a low-cost processed dairy product, with the goal of expanding its reach throughout the state.
